Swedish-Style Meatballs:
1/2 cup cashew sour cream (recipe below)
1 1/2 cups vegan beef broth (recipe here: http://goo.gl/tEgcPY)
1 tsp soy sauce
1 tsp brown sugar
black pepper to taste
10 meatballs (good recipe here: http://goo.gl/AtsKxP)
pasta or rice to serve OR, mashed potatoes & cranberry jam for the traditional way- as my beautiful Scandinavian subscribers told me :)
Cashew Sour Cream:
1 cup soaked cashews
1/2 cup water
2 tsp apple cider vinegar
1 tbsp lemon juice
1/8 tsp salt

How to bake a potato: You can bake potatoes right on the oven rack or on a foil-lined baking sheet. Bake at 400 F the 50-60 minutes. Flip halfway through. Check to see if they are done by poking with a fork. If it is easy to pierce, it's done!
Mug Cake (approximate, for a regular size mug):
3/4 cup cake mix
3 tsp vegan yogurt
enough non-dairy milk to make it a thick cake batter consistency
Microwave 2 minutes (it might need less or more time depending in your microwave wattage).
